Stage 2: Finer breakdown of the constituents

A final, combined fermentation process involving all fermentation fractions takes place. A final heating step results in the additional formation of postbiotics.

What is fermentation?
The process of fermentation has been known for many thousands of years. Long before our modern era, people were already using this method to make their food last longer and to preserve it — for the long winter months, for example. Fermenting food is an entirely natural process in which the products are stored in a low-oxygen environment. Bacteria or fungal cultures are then added to convert organic substances. The added cell cultures change the composition of the organic structures, only the beneficial bacteria survive, and the effect of the plant components is amplified.
What is cascade fermentation?
With cascade fermentation, Dr. Niedermaier developed the ultimate refinement of this technology, designed to release the optimum amount of secondary plant compounds and vital nutrients from the cells. Every food supplement in our shop is produced using this method today. It is a multi-stage fermentation process made up of several partial fermentations. In this way we come remarkably close to the principle of the natural digestive process. Dr. Niedermaier is the only food supplement shop in Germany that manufactures its products using this patented cascade fermentation process.
Cascade fermentation consists of three key steps:
1. Selecting high-quality raw materials
For the food supplements in our shop we use exclusively fresh, organically grown fruit and vegetables as well as nuts. These are chopped, placed in a fermenter and combined with lactic acid bacteria.
2. The start of fermentation
Fermentation begins after around two days, and the first partial fermentation follows roughly two to three weeks later. Further fermentation stages then follow step by step, breaking the ingredients down into ever finer components.
3. Producing the Regulatessenz®
All fermentation fractions are then brought together, put through another fermentation process and centrifuged. The result is what we call Regulatessenz® — a substance that needs no preservatives whatsoever to keep. Chemical additives, sugar and alcohol are equally unnecessary.
A patented manufacturing process
The cascade fermentation process is patented. Its great advantage is that the valuable secondary plant compounds are released during the process and are present in the Regulatessenz® in highly concentrated form and as Stammenzyme® (source enzymes). This is particularly beneficial for people with allergies, since a large proportion of the proteins — and therefore also potential allergens — are fermented into peptide structures with lower allergenic potential.
